Mattie’s Watermelon-Feta Salad

Ingredients
1/2 tsp. salt
3 cups seedless watermelon cubed (Slice top off watermelon and scoop out melon. Save shell to serve the salad in. Even up the bottom so melon shell sits level.)
1 cucumber, chopped
1/2 cup sweet onion, thinly sliced
1 cup crumbled feta
1/2 cup chopped mint
1/4 cup poppyseed dressing (more if desired)

Assembly (Make right before serving.)
Add the ingredients, mixing gently to incorporate. Serve immediately in the watermelon shell.
