Gack! In a nanosecond, I’m not breathing. My vision blurs. I can barely remember my name. Ever felt like that?
So I’ve decided whenever I have that kind of day…week…month…I need an easy dinner. One of my favorites is soup. With everything in it. This one was inspired by one of my Facebook pals: Diane Davis. My Facebook pals have been very helpful giving me ideas for meals, tips for cooking, tips on gardening. They’re great!
What are your go-to easy foods?
CHICKEN CHEDDAR SOUP
Ingredients:
(Serves 2)1 cup cooked chicken breast, diced
1 cup broccoli, diced
1 16 oz. carton your favorite mushroom soup
1 cup white Cheddar cheese, shredded
1 teaspoon paprika
1 teaspoon salt
1 teaspoon white pepper
6 crustini toasts for decorationDirections:
Cook chicken breast in oven, wrapped in foil, for 45 minutes. Remove and cool, then dice. [May be made days ahead. If frozen, thaw to room temperature.]
In saucepan, bring 6 cups of water with 1 teaspoon salt to boil. Dice the broccoli and toss into boiling water. Cover and cook 3 minutes. Pour off water and replace lid for 3 minutes. Drain broccoli again. Set aside.
In a large saucepan, pour in mushroom soup. Bring to gentle boil, turn down to simmer. Add chicken and broccoli to the pot. Cook 3-5 minutes until ingredients are hot.
Add the white Cheddar cheese and seasonings. Stir until incorporated.
Pour into individual soup bowls. Garnish with paprika.
Serve hot with crustini or crackers.
NOTE: If you need to eat gluten-free, then make sure you use a gluten-free mushroom soup, and it goes without saying that the crackers or bread should be gluten-free, too.

And I love this book. 🙂 During the annual Cheese Festival in Providence, Charlotte is attending a brain trust featuring some of the who’s who in the cheese world. When Charlotte and her hubby Jordan discover a dead body though, the days of cheese learning are off…and Charlotte can’t help but try to solve the murder mystery on her own.
The author does an amazing job of plotting a believable murder mystery. The whole time I was reading For Cheddar or Worse, I was wondering whodunit and couldn’t figure it out. That is the earmark of a good mystery to me. Add in the scrumptious cheese talk throughout, and I was sold. I like the characters and the plot was well done. Even if you have not read previous books in the series (I’ve only read one) you can still thoroughly enjoy this cozy mystery. For Cheddar or Worse by Avery Aames was a delicious tale that satisfied my hunger for a superb cozy mystery.
