I don’t have a photo of my Pumpkin Cheesecake because I didn’t make it this year, but it’s definitely my favorite holiday recipe!
2 (8 oz) packages cream cheese, softened
3/4 cup white sugar
1 1/2 – 2 teaspoons pumpkin pie spice
1 (15 oz) can pumpkin puree
1/4 teaspoon salt
2 deep dish graham cracker crusts (or make your own)
1) Preheat oven to 350* F.
2) Beat together cream cheese and sugar, add pumpkin and pumpkin pie spice. Beat in eggs one at a time. Add salt & beat. Pour batter evenly into the two crusts. (There may be a little left over – do not overfill your crusts.)
3) Bake at 350* F for 50 minutes or until a knife inserted in the center comes out clean. Let cool before eating.
